Could you also add a 3 digit display for BARS, as in
"how many bars am I hitting you with?".

I think this gets back to my comment about resolution.
If you are using a quantized bar-graph display it is
easier to change the calibration than to change the
resolution. OTOH, three digits would be nice or even
an analog meter. (I actually still prefer analog
meters for a lot of things, especially doing
calibrations involving tweaking things.) 

I just added a task to my future-K3-firmware list:
allow the VFO B display to optionally show signal
level in dBm. Three digits. Just for you, Brian :)
