Just use a panel mount BNC jack and some scrap plexiglass. I made the exact
same dipole that you describe. Simply drill a hole in the plexiglass for the
BNC jack and mount the jack. I also drilled a few holes for antenna strain
relief. You can get the BNC jack connector in any Radio Shack. It has solder
lugs for soldering the doublets to. Voila, no longer need to cut your coax.

You can buy a BNC to banana plug adapter, with connectors like you see on
the back of tuners.

I am wondering if there is such a BNC connector that
you can use for a center conductor on a dipole. I
have a 50ft length of RG8X that has BNC connectors on
either end. Of course i could cut one connector off
and just solder the coax to the antenna but before i
do that thought I would check.
What I am trying to do is make up a 44' Dipole and
feed it with coax for portable work when I go to a
park, etc.
