Does anyone know if the K2/100 is 100 Watts Peak to Peak? Is so where is it
in the manual?

It's 100 watts both PEP SSB or CW. See page 47 of Appendix G, 100-W Stage
and RS-232 I/0 (K2/100) manual. Key-down time in CW is limited to hold the
duty cycle within the thermal limits of the finals. The output power is
derated for high-duty-cycle modes such as PSK31.
