Where are you reading in the manual? The offset is your sidetone:
you set one, you set the other. The idea is simply that, on cw, when
you hear a signal whose tone is the same as your sidetone, the readout
shows the actual qrg of that signal source. If you change your
sidetone to 500 Hz, the same will be true because the sidetone
frequency is used automatically by the K2 to determine the offset.
So, go ahead and lower your sidetone to what ever is good for your
ears. Your frequency readout will automatically adjust, and what you
see displayed on the dial will be correct when you are listening to a
signal whose tone matches the sidetone. But, if you do change the
sidetone, you are also going to have to redo CAL FIL to make sure your
filters are centered on your new sidetone frequency.
