When you change the pitch of your K2's sidetone, you also change the
pitch of the received signal at its peak signal strength.  This will put
the new pitch of the received signal near the edge of (or outside of)
your narrow xtal filter BFO settings resulting in a much lower peak
signal strength.  Therefore, you must readjust those filter BFO settings
to move the received signal at the new pitch back into the center of the
filter passbands.
