What multiband or single band  antennas are available to be used with the
K2, for quick ops?

How about some plain stretch of wire.  I have an MP-2 for work out of
hotel rooms, but most of my DX I have worked with a 100ft wire that is
matched by the ATU.  I use vinyl-covered stranded #22 that is used as a
tether antenna for military box kites (available from www.fairradio.com)
- 100ft fit on an empty solder spool that easily fits into your pocket.

Ah, now you are talking about my favorite antenna, the W3EDP end fed
wire!
As described in the book Practical Wire Antennas by John D. Heyes G3BDQ,
it
is an omni-directional wire antenna 85 feet in length with a 17 foot
counterpoise that is connected on some bands. 
 
With the exception of 15 meters, it loads easily on 80-10 meters with my
KAT2. I do tune the 'poise with an MFJ Artificial Ground, but supposedly
this is not necessary.
 
The antenna requires no special earthing arrangements and can wend its
way
around a piece of property as needed.

I don't know exactly what you have in mind but a good quickie antenna for
use in the field is FFD or Field Friendly Doublet.  Info on this is on
the
ARS Sojourner site.  Under the general heading of equipment, then subhead
of antennas.
 
It is two pieces of wire and some small plastic used as spreaders.  You
place the spreaders on the the wires as far as you need the feedline to
go,
and then spread the wire dipole style.  They work fine.  I've used one.  
 
You can cut the wire to whatever length you need for the freq of choice.
Hang them the easiest or best way.  Easy to use, small, lightweight. 
Good
portable antenna.
