Personal opinion follows...

Those of us who have a bit of gray in what few hairs we have left, 
generally find that our hearing seems to respond better to CW notes (and 
sidetones) around 600Hz, rather than the higher pitches.

This having been said, the builder is free to choose (within the available 
range) whatever CW note (and matching sidetone frequency) he chooses to 
use. They all work.
