If they ack the order by email I would imagine that means an acceptance
of the the order and so would be binding?

I have two emails confirmations, one with the old price, one with the
new.  When I gave her the web confirmation number of the confirmation
with the old price, she told me her copy of that didn't mention any
price, only referenced the order which has the higher price.  So she
didn't quite call me a liar.
