Joel,

The only problem with the 2 ohm speaker would be a reduction in audio 
power transfer but I doubt if you would notice it.  I don't think it is 
worth the trouble to match the impedance.  I don't know where you would 
find a transformer to do that anyway.  You could put a 2 ohm resistor in 
series with the speaker.  That would make the output transformer happy 
but would reduce the audio level.
