Chuck, on page 13 of the manual it talks about APRS host. If that host string can be deleted that should remove its reporting. I also suspect the radio you are using will report if it's connected into a DMR repeater that reports to the APRS system. So you would want to disable it as well.
However I stumbled on the detail that APRS can send text messages to cell phones. Maybe that might be usable with MESH? See:

Someone else needs to address the DMR repeater access. I am curious about that as well.
