Paul and I used to do HF mobile all the time years ago. I remember one time
up in Canada barely hearing Barb on CW; just broke the receiver but I could
copy. We had lots of fun on HF mobile.

I agree whole heartedly that a laptop should only be used if not in motion.
It has to be worse than texting while driving! Tuning the radio is bad enuf
-- the best was with the control head on the dashboard so you had a chance
of seeing the exhaust pipes in front before you hit them.
I used Vibroplex paddles that dropped right into the space above a pair of
cup holders in my console. The feet stayed put within the holders and it
worked perfectly. I did it with manual transmission cars and found that it
was easier to move my hand from the paddles to the shift lever than to put
down a mic to do it.
The breakthrough for me came after a while of listening to CW while I drove
and realizing that I could copy very well without a pen and paper, even
though I'd always done that at home. So you can start out on SSB and then
listen to CW while there are no SSB contacts. I started out chasing DX
(worked all but one continents from the car during my ARRL commuting days),
but ended up ragchewing on 40, which seemed the most reliable during the
morning commute.
I will confess that I did write down call signs, but not in real time. While
I could copy them fine, remembering them after 10 min was another matter
(what was your name again? <g>) -- perhaps a byproduct of my advanced years!
