Don't know why not, I've done it many, many times.  You can buy 1/4" adapters with a mono male plug and female stereo socket (both sides in parallel) that should do the trick for you.  I've made up short jumper cables in the past with a male mono plug on one end and female stereo socket on the other.  If you insist on adding resistors, something on the order of 10-47 Ohms in each leg should do the trick.

The above presumes that it's a Low-Z headphone jack on the receiver, if it's more, say 600 Ohms or a Hi-Z output then you'll need a matching transformer.  In that case an audio output Xformer from an old tube radio or similar should work OK.  As you're not needing a lot of power to drive the headset, power lost to impedance mismatch shouldn't hurt anything.
