I also think one of the benefits of eutectic is that the melting point is very specific, not a range of temperatures where it might melt/solidify. So there is less chance a wire/component lead will move when cooling to help prevent cold joints.

63/37 is "eutectic" solder.  That means it melts at the lowest possible temperature with those two components. 
 
It matters if you are on circuit boards and with highly heat sensitive components.
