[ARC5] Homemade Isolation Transformer

I acquired five power supplies for "EXIT" signs.  They have a transfomer with 11VCT AC output and a circuit board with 3VDC output.  Since that is not good for much of anything I thought I would hook two of them back to back to make an isolation transfomer.  I'll use that to feed a 1.25 amp Variac I found in the same dumpster, to be used for various nefarious and arcane purposes.

I am wondering if there is any reason to hook the center taps on the transformers together.
