If you want to try stacking antennas, there's a lot of info on the web
about stacking yagis. At 2.4 GHz this has been done by Ham satellite
and EME operators. Although they usually use circular-polarized antennas
while we stick to vertical or horizontal polarization for terrestrial
applications.
Also, at your ridgetop location, the Wintertime winds up to 120mph would
probably make your installation more tolerant of the wind loading on a
stack of yagis than a stack of dishes. That way the wind loading is just
the antenna elements and booms, not the enormour reflectors too.
