I don't think I have seem that voltage rating for what I assume is a
dipped silver mica capacitor.

If I were you I'd string four 500 v. 1000pF to get the 2 KV 250 pF and
four 200s to get the 50.

These are available on eBay.   Search "silver mica capacitor."
