I sent this on to Physicist buddy of mine, and here is his response:
It probably won't be very sensitive because there isn't anything that
easily deforms. He should at least use a SMD chip capacitor because
those have a well defined orientation of the layers (for example see
link http://www.avxcorp.com/docs/catalogs/licc.pdf document page 83).

I really wonder how it might sound if I were to attach some kind of a
diaphragm to the side of one of those little brown ceramic caps (.005 - .02
uf) and glued the other side down to a piece of hardwood and put about 50
volts or so to it through a 5000 ohm resistor. I'll make the whole
microphone case out of wood in lined with aluminum foil with slots cut in
the front.
