Ok, the /nick procedure is a couple of steps. I’m on an iPad, so Wally’s menus aren’t the same.)

As if you’re typing a new message, enter /nick and a dialog appears. You have to select “new nick” and you’ll get a prompt in the message line. Enter your new nickname for that server and you’ll get a confirmation.
