The MM QSOS would count for the worldwide grid square chase but the exact co-ordinate to pinpoint the grid would be needed on the QSL. You could likely take his stated position and pinpoint it yourself and if needed as a grid, tell him you are sending a card and please note his grid of XXOO on the card. 
A boat tied to a dock is not valid for a DXCC country, but it is a MM operating position. Otherwise you must operate from the dock per se with equipment and power supply off the boat.
