I am very new to 6 meters and am looking to get an
antenna up. I am interested in building a simple,
cost effective antenna for SSB operation that will
give me maximum performance. I don't have the ability
to put up a beam and so I am wondering about putting
up either a dipole (mounted as an inverted V) or ? I
am looking for your recommendations for what I should
use and how high I have to be able to mount it. Also,
I would like to get plans for the recommended
antrenna/s.

There are a number of things you can do. A dipole is OK but gives you zero gain or directivity however when the band is open, the band is open and a dipole works fine. (I worked KG4YUW in EM74 and he was using a VX-5R and a dipole. Yes, boys and girls he was on an HT, FM, dipole in the attic from EM74 to EL29. I kind of estimated the distance at around 900-1000 miles). Now moving on. I'm not sure what you mean by you can't put up a beam so I will maybe move out of your needs but a 2 element quad is a good choice. It has a small footprint, and can be turned with the cheapest of TV rotors or the ole armstrong method and doesn't have to be all that high to be effective. However if you just need something simple and omni directional I would also suggest that you consider maybe going with a loop like a KB6KQ or M2.

As for plans etc. Do a google search http://www.google.com/ and just type in 6 meter antenna plans and you will stay busy for at least a day or two.
