Ron: Try this with Eudora.
Tools|Options|Viewing Mail
Check the box: Show Message Preview Pane.
Now you will have two windows. The upper one is just the titles of the 
messages in a mailbox. The lower one is the 'preview' of the message that 
has been selected by clicking ONCE on a message in the upper window. You 
can size the two windows by clicking on the border between them and 
dragging. I have the upper window set to display 5 titles. That leaves a 
fairly large lower window to display the contents of the selected message.
The messages displayed this way will not contain the headers that are 
bothering you.

You can also reply to a message by just selecting reply from the main menu 
(also Ctrl-R). You will reply to the one displayed in the preview pane. If 
you double-click on a message title in the upper window you will open a new 
window which will show all the stuff you are complaining about.
